Moon Disc Salad

I think it is important to make food beautiful, and this dish is always a showstopper. A distinctly Asian influenced dish it is comprised of radishes sliced very thin into translucent rounds. I like to use watermelon radishes and Daikon and pink radishes, which then get tossed with grated carrots, a little thinly sliced shallots or green onion or both! The dressing is made from splashes of mirin, tamari,rice vinegar and sesame oil. Some chopped seaweed and black and white sesame seeds finish the dish.
